Punjabi foods are exotic and well-liked by most people. One food is a drink that
is very special to the Sikhs. It is called Kachi Lassi. People can drink it any time
but in the month of June it is served in Gurdwaras across the world to
celebrate Guru Arjan Dev Ji’s Shaheedi Gurpurab. Then it is called Chhabeel, not
just Kachi Lassi. No one seems to know the real origin of this tradition, but it is
very popular since hundreds of years in Sikh communities.
Chhabeel, like Langar is served to all, irrespective of religion, caste or gender.
Anyone can serve it. The sevadaars put up stalls like lemonade stalls in America
where people can come and take a glass of cold Kachi Lassi in scorching heat of
India. It is especially served on highways in Punjab. The sevadaars are so
enthusiastic that they put up barriers in the roads to stop people so they can
have a drink before they go on to their destinations. Now you will learn how to
make Kachi Lassi.
A healthy version that is also an antacid for your stomach is made without sugar.
